The perfect amaranth cookie are naturally crunchy, thanks to the almonds..and naturally sweet, thanks to the dried cherries….but not overly sweet…with a slightly nutty flavor thanks to the popped amaranth.
The perfect amaranth cookie recipe is super easy…and only requires a few basic ingredients..
3large bananas, mashed
1/4cupfresh ground peanut butter
1 stick butter
1tsp baking powder
1C popped amaranth
1C chocolate chips
Prep…Preheat oven to 350..(never have figured out why recipes tell you to go and preheat your oven when you’re fixing to have to do something like stick the dough in the fridge for an hour…just go with it)...
Make the batter…
Combine mashed banana, peanut butter, eggs, and vanilla.
Stir together your flour, butter, sugar, salt, baking powder, and baking soda until creamy.
Add this to your mashed banana mixture.
Stir in the amaranth, coconut, chocolate chunks, and almonds.
Cover. Refrigerate for an hour.
Make the cookies…
Scoop the batter onto a greased cookie sheet, making each cookie with about 1-1/2Tbsp of dough…and spreading them about 2″ apart.
