Strawberry Shortcake

  • 3C flour 
  • 1-3/4C sugar 
  • 1-1/2tsp baking powder 
  • 3/4tsp salt 
  • 4 eggs 
  • 3/4C cooking oil
  • 1C milk 
  • 1Tbsp vanilla 

Preheat to 350°F. Prep 13″x18″ rimmed baking sheet. Whisk together flour, sugar, baking powder, and salt. Add eggs, oil, milk, and vanilla.

Pour batter into baking sheet. Bake 25 minutes. Cool the cake on a wire rack. 

Use a 3″ round cutter to cut the cooled cake into 24 rounds.
To make the strawberry filling…

  • 2 pints sliced strawberries
  • 1/4C sugar
  • 1Tbsp lemon juice

Toss ingredients together. Set aside for thirty minutes at room temperature. 
To make the whipped cream…

  • 2C cold heavy cream
  •  1/2C sugar
  •  1tsp vanilla  

Place ingredients in a large bowl. Beat with an electric hand mixer on medium-high speed until stiff peaks form.
To assemble each shortcake… Sandwich a scoop of strawberries and a generous dollop of whipped cream between two cake rounds.
