Martha Stewart’s Double-Chocolate Sandwich Cookies

Preheat oven to 350 degrees. Line three baking sheets with parchment. 
Cream together...

  1. 5Tbsp melted butter
  2. 1 egg

Mix together and then add…

  1.  1 1/4C flour
  2. 3/4C cocoa powder
  3. 1/2tsp baking powder
  4. 1/4tsp salt
  5. 3/4C brown sugar

Divide dough into thirds. Roll each third out as thinly as possible.
Refrigerate 30 minutes.
Poke holes in the dough with a fork. Cut dough into 2″ rounds. 
Bake 10 minutes. Let cool on wire racks.
Spread filling between two cookies. Roll edges in chopped hazelnuts.
Chill overnight before serving.

Sandwich Cookie Filling

  • Combine three sticks softened butter, 3C powdered sugar, 3/4tsp vanilla, 1/4 tsp salt.
  • Stir in 6oz melted and cooled bittersweet chocolate.
